Organic Shops: Shops Almost Like Any Other
In 2016, shops specialising in the sale of organic products accounted for 3.5% of local food stores. Younger, smaller and more often organised as networks, they develop local development strategies that tend to be more urban than other businesses. Organic shops are more present in the South, in the Paris region and in the North West. Compared to non-organic mini-markets, they employ more employees and have a higher turnover and margin rate. The most recent organic shops differ from the older stores in several respects: they tend more often be organised as brand networks, are comparatively larger and are less present in large urban centres, preferring suburban areas and less densely populated areas.
