The catering sector: from tradition to fast food
The catering sector, particularly in its traditional form, is dominated by microenterprises: they account for 56% of value added and 52% of salaried employment. The fast food segment, which accounts for around a quarter of businesses in this sector, has continued to grow. One in three companies in the catering sector has no employees. The majority of employees in the traditional catering segment are on full-time contracts, while the majority of fast food employees work part-time.
